ENJOY A GAETANO'S CLASSIC AT HOME!
Linguini and White Clams: So simple, but so good!
-24 top neck clams
-3 tablespoons extra virgin olive oil
-pinch of red pepper flakes
-1 teaspoon roasted garlic
-1 teaspoon chopped garlic
-salt and pepper to taste
-quarter cup white wine
-1 cup clam juice
-1 tablespoon butter
It's this easy:
-Cook clams until they open
-Add parsley to taste-
-Serve over a bed of linguini
-Enjoy!!!

BRING ON THE WEEKEND!!
It started out as a quiet, muggy Friday night at Gaetano's...and then 7:30 came around. Apparently, people were waiting for a bit of a cool down before heading to Gaetano's for dinner, but before we knew it, the tables were filled, the wine was being cracked and the fresh scent of Chef Dago's weekend specials engulfed the dining room.
Our customers couldn't resist summer favortites like the baby eggplant filled with crispy pancetta and finished with a balsamic reduction, or the patty pan yellow squash stuffed with goat cheese, and herbed breadcrumbs finished with a balsamic reduction. Many smile and think back to the days at Nonna's house before ordering the zucchini flowers sprinkled with parmesean cheese and served with marinara dipping sauce.
And then there's dinner, and the 22 oz. pork chop. It is becoming more of a Gaetano's specialty every day. Sauteed and served with hot cherry peppers, roasted red peppers, garlic, olive oil and basil its got customers salivating before they even dig in.
Gaetano's Homemade Lemon Pepper Fettuccini is also leaving customers speechless. A loud MMMM is the typical response we've gotten from the homemade pasta dish with
shrimp and smoked salmon.
And on a hot summer night, who can resist one of Gaetano's new ice cream pies?
How about key lime, orange creamsicle, or peanut butter cup. Or cool off with a tartuffo, or an orange sorbet. Gaetano's features a number of other house-made desserts that are sure to please.

SWORDFISH DI GIOVANNA
-Juice of one lemon
-Extra Virgin Olive Oil
-Sea salt, and freshly ground pepper
-3 cloves of garlic, peeled and finely sliced
-Sprig of fresh mint, leaves picked and roughly sliced
-4 1/2 inch thick slices of Swordfish
Squeeze lemon juice in to a bowl and add 3 times the amount of olive oil.
Season with salt and pepper and stir in the garlic, mint and oregano.
Heat a griddle or frying pan until very hot and season Swordfish or Tuna with salt and pepper.
Place in pan and cook for about a minute until golden. (slightly pink in the middle, but feel free to cook a little more)
Divide fish and spoon sauce over the top.

For nearly three years now, Gaetano's has been hosting a variety of functions in its comfortable and classy private party room. We have welcomed thousands of people to the Gaetano's family celebrating first birthday's and 90th birthday's, communions and confirmations, bridal showers and baby showers, and just about any other occasion you can think of.
On the business side, Gaetano's private party room has doubled as a culinary boardroom, hosting business dinners and powerpoint presentations for a number of local businesses and major corporations.
The great thing about Gaetano's, is we afford customers the opportunity to transform and customize the room in a way that specifically fits their needs.
Most importantly, Gaetano's provides up to 4 delicious courses, served by our knowledgable and friendly waitstaff.
Let us share a few tips with you that will make your next private function at Gaetano's a perfect one!
# 1 What's the Occasion?
Feel free to suit the private room to your personal and business needs.
If you are celebrating a birthday or wedding, feel free to decorate with balloons or table settings and place cards to add your own personal touch to the party.
Tables will be arranged any way you want. We will also provide a cake table and gift table for the guests to see as they walk in.
For business dinners, our back wall is shaped perferctly to double as a projection screen, for powerpoint or slide presentations. We would also be happy to set up guest registration tables, where people can sign in and drop business cards, during such events as networking wine tastings.
The main thing, is to make the room your own for the evening.
# 2 What can we do about Wine and Drinks?
We would be happy to provide our guests with our house wines from the Westfall Winery. Pitchers of Sangria are also available. Gaetano's also remains a BYOB, meaning you can predeliver your own wine and beer, and create your own bar atmosphere before dinner. Gaetano's waitstaff will be happy to serve your guests drinks at the bar as they arrive and get situated. Soda and drinks for kids are included.
# 3 How do you Recommend we Order?

Gaetano's 101: Pairing Our Westfall Wines with Gaetano's Specialties
We want to give you a few tips on matching the perfect house wine with some of your favorite Gaetano's dishes. The right wine could compliment your dinner and bring out tastes and flavors you otherwise may not have tasted. We know many people have specific preferences when it comes to food and wine--many never stray from Penne Vodka and Pinot Grigio.
But when you try something new on our menu we hope we can help you find the perfect wine to compliment your meal.

RED WINES
Merlot-Loaded with fruit with a smooth finish.
This red would go perfectly with our homemade potato gnocchi in a pomodoro sauce.
It would also soothe your pallate if you're eating a blackened fish. Although white is usually prefered with fish, blackened style makes Merlot favorable.
Also perfect for House Specialty, Lamb Osso Bucco
Petite Sirah- Inky dark and unfiltered, this wine show lots of character
This would be a nice choice for a dish with Prosciutto such as Mission Figs with Prosciutto di Parma.
It would also compliment grilled meat dishes, such as the Grilled Hangar Steak, or Pork Chops Contadina.
Cabernet Sauvignon- "The King of Red Wine Grapes" Full bodied wine has nice fruit aromas with sturdy tannins that have a smoothe finish.
You'll want to drink this with two of Gaetano's hearty favorites--the delicious Rigatoni Bolognese and Beef Braciola. Also great with Veal Slatimbocca in a mushroom demi-glace. It's the perfect compliment to a meal in the fall or winter.
Sangiovese-Made from the Chianti grape in the Tuscany Region of Italy. This garnet colored wine explodes with cherries and has a soft finish.
A favorite among Gaetano's customers because it matches just about anything authentic Italian. Derived from Sanguis Jovis in 16th Century Tuscany, meaning 'Jupiter's Blood.'
Try it with Calamari Calabrese to compliment the spices and crostini bread.
Or give it a shot with any authentic Gaetano's dish.
WHITE WINES
Both of our white wines are award winning and are favorites with a number of pasta and fish dishes. Enjoy them with white fish such as Tilapia or Swordfish or Pasta dishes such as Scallops Tuscany, and Fettucini Teresa with shrimp.
Chardonnay-Bright tropical fruit flavors with a hint of oak.
The perfect match for all Mediterranian Fish like Tilapia and Bronzino.
Also a favorite with Gaetano's Linguini and White Clam Sauce.
Try it with any white wine, garlic, and olive oil based sauce.
Chicken Carciofi, Chicken Franciase, and Shrimp Scampi.
Pinot Grigio- Light & crisp with hints of melon and spice
Also delicious with just about any seafood dish, regardless of a red or white sauce. A lot of Gaetano's sauces are tomato based, but infused with white wine, making them perfect for Pinot Grigio.
It's great with lightly breaded dishes such as Veal Cutlet Milanese.
